Begin by boiling Mr Jeffares Blackcurrants in 237ml of water, with the cinnamon for about two minutes. In a metal bowl, mix gelatine and cold water and leave for 2 to 3 minutes. Add sugar without mixing. Push the boiled blackcurrants through a sieve into the gelatine mixture.
Stir this mixture well, then place the bowl in a larger container for it to chill. After chilled, pour the mixture into a large bowl or smaller individual moulds. Chill the mixture for a minimum of two hours until it sets. Serve with chilled soft cream.
For a variation on the recipe, add one tablespoon of rum.
Consume within two days.
