Blackcurrant Chicken Casserole


  • 118g mashed Blackcurrants and Sage Leaves
  • 1 Packet cream of Chicken Soup or 1 tablespoon of Chicken Stock
  • Chopped Garlic, onions and carrots
  • 2 tablespoons Mr Jeffares Irish Blackcurrant Cordial 
  • 150g Sugar or 1 tablespoon of runny honey
  • Black Pepper
  • 2 tablespoons Soy sauce
  • 6-8 Chicken pieces


Brown the chicken pieces in butter or oil. Then combine all the other ingredients. Pour the mixture into a casserole dish over the chicken. Bake at a moderate temperature until the chicken is cooked which should take at least 30 minutes.
