Mix the Flour, sugar and Mr Jeffares Blackcurrants, add the egg and blend with the mixture using a fork. Lightly mix dry and and wet ingredients, until just combined. Spoon the mixture into muffin paper which is placed in muffin pans. Bake at 180C for 15 minutes. The recipe will make up to 8 or 9 muffins, depending on size.
